Meet The Team

As a team we want to offer a course that provides everyone with the skills, knowledge and confidence to run a ski chalet in the Alps. Whether you go on to do that or something completely different, after a week on the course you will have worked very hard, had a ball, met new friends and gained some very important and useful skills, not just for your chalet but for your life. All tutors are DBS checked (Disclosure and Barring Service, formally known as CRB-Criminal Records Bureau).

Clive started his catering career by studying Hotel Management at Westminster College London. After that he sidestepped slightly and became a store manager for Next Retail. He went back to hospitality 5 years later and worked for Whitbreads running gastro pubs in London( MBII). After meeting Ilse in Spain they became a team and ran three restaurant/bars together with the last one being a British restaurant in Antwerp, Belgium. Whilst in Antwerp Clive trained at the International Chocolate Academy and became a Master Chocolatier so rest assured he will be happy to show you some of the tricks of the trade! Between them they have worked 5 ski seasons as Chalet Hosts having totally fallen in love with the French alps.

Ilse is passionate about 2 things, food and travel, in that order. Growing up in Antwerp,Belgium, she studied tourism & leisure. She started her career in the tourism industry in Italy and then Spain, where she met Clive in 2000. Together they have worked and owned pubs and restaurants in the UK and Belgium. After selling their last restaurant in Belgium in 2013 they decided to have a gap year and do a ski season. The rest is history. They fell in love with the French Alps and are now on their 3rd ski season with Morealps and their 3rd summer of running the cookery course

Sarah’s love of chefing has found it’s natural home somewhere between Ireland and the Alps! Not as fussy as fine dining, but with an emphasis on fresh ingredients and food made with passion. Sarah’s training ensures that the fun is put back into chalet cooking. Never buying into the set menu on a Monday/Tuesday/Wednesday mentality, our guys and girls cook up inspiring treats every day. Dan has completed over a dozen Winter seasons in Europe and the US and still loves the mix of physical Winter work, mountain life and all that’s in between.
